Caster Sugar 350
Butter 30
Fresh Cream 125

Working Method

  1. Gently heat castor sugar, butter and fresh cream in a large heavy pan until the sugar has been dissolved completely. 
  2. Bring it to a boil by stirring all the time with a wooden spoon. 
  3. Cook until it reaches the soft ball stage (118°C) on a sugar thermometer. 
  4. Remove from the heat. 
  5. Add & stir chopped Carat Coverlux White
  6. Stir until the Carat Coverlux White has been melted and the mixture is smooth. 
  7. Pour into a buttered 18cm square tin and chill for a few hours until firm. 
  8. Cut into desired shape and serve Carat White Chocolate Fudge.
