Working Method

Method
  • Mix an the ingredients for 3 minutes at low speed and 8 minutes at medium speed. 
  • Put the prepared dough in oil greased bowl for 60minutes. Then knock back & fold the dough. Repeat this process twice. 
  • Once proofing is done, transfer them on flour dust table, sieve the flour on top of the dough (as in dusting) 6 divided approximately 100 gms of portion. 
  • Place them on greased trays 6 final proof them for 20 minutes, bake at 200°C. 
  • Dough temperature after mixing: 18 to 20°C. 

Baking
  • Baking: Oven temperature: 200°C. 
  • Baking time: 18 minutes with 7 seconds of steam. 
  • Bake last 6 minutes with open damper for crispy crust.
