Working Method

Method 1
  1. Mix cream butter and icing sugar together till it becomes fluffy and creamy. 
  2. Add Classic Moka and egg gradually and mix. 
  3. Add the flour and milk powder in the above mix and fold it.

Method 2
  1. Mixing: 3 minutes at low speed and 5 minutes at medium speed. 
  2. Dough temperature: 26°C - 28°C. 
  3. Bulk fermentation: 15 minutes 
  4. Scale: 70 gms 
  5. Make Up: Cut butter into small cubes and keep it in the center of the 70gms dough and roll like buns. 
  6. Final fermentation: 40 minutes at 35°C / 85% humidity. 
  7. Preparation before baking: Pipe the coffee mixture on top of the buns when proved. 
  8. Baking: Oven temperature: 200°c. 
  9. Baking time: 15-20 minutes. 
  10. Your Mexican Coffee Buns is ready to serve.
