Ingredients

Method

  1. Mix Tegral Donut Mix Plus, water and yeast together
  2. Mix the dough for 3 minutes at Low speed, followed by 5 mins at Medium speed. Dough temperature should be around 24⁰C.
  3. Bulk Fermentation: 5 mins
  4. Make Up: Sheet the dough until 7mm thickness is achieved. Cut using round donut cutter.
  5. Final Fermentation: 30 minutes at 35⁰C/75% RH
  6. Deep Fry the Berliners. Oil temperature should be 200⁰C.
  7. Fry each side for 30 to 35 seconds and remove.
  8. Once cooled, centrefil with Fruitfil Strawberry. You can make with other fruitfils also.
  9. Dust Icing sugar on top.
